
Happy 2024! We are a week into a brand new year and I’m checking in to see how you’re doing with any goals, changes, resolutions or new programs you’ve started? Any lifestyle change is always easier if you have some tools and a plan, so I wanted to share a family favorite that can be eaten as a side dish, snack or even breakfast.
These sweet potato slices are delicious and nutrient-dense and you can use your imagination to tailor them to your liking (or make a variety)! Sweet or savory, you can get creative with toppings and seasoning. The beauty is being able to use ingredients you already have on hand.
Start with slicing the sweet potatoes and brush with a little EVOO and a pinch of salt and pepper. You can bake in the oven at 400 degrees x 20 min or use the air fryer at 400 for 12 min.
Now, the sky is the limit to choose your toppings. Nut butter or cream cheese spread with fruit is popular at our house and we like to sprinkle in shredded coconut, chia seeds, etc. For more savory options, sliced avocado or egg with Everything Bagel, parsley or other herbs and seasoning are super yummy as well.
