Super Bowl Snacks

Chiefs or 49ers? We are one week away from Super Bowl Sunday and I know you’re brainstorming what to take to the party or to prepare for a fun spread at home!

Look no further than these bite-sized mouthful of deliciousness Protein Energy Bites from Mel’s Kitchen Cafe. My three kids devour these and I make them on the regular to pack in lunches, pair with yogurt or as an after-school snack. The beauty is that you can get creative and add ingredients to your liking.

The Best Energy Bites (Master Recipe)

Yield: 24 small bites | Prep time: 20 min | Total time: 20 min

1 cup old-fashioned oats

1/3 cup ground flaxseed meal

2/3 to 1 cup nut butter

1/4 cup honey

Dash of vanilla extract

Pinch of salt

Add-ins: mini chocolate chips, shredded coconut, chopped nuts, dried fruit, chia seeds, etc.

  1. In a food processor, add the oats and process until coarsely chopped (you can also use a blender).
  2. Add the flaxseed, nut butter, honey, vanilla and salt. Process/mix until the mixture comes together into a soft but not overly sticky ball.
  3. If the mixture is overly dry, add nut butter a tablespoon at a time and process/mix until the consistency is soft but not overly sticky or crumbly.
  4. Remove the blade and add any add-in ingredients then mix with your hands until evenly combined.
  5. Roll the dough into small balls and place on a parchment-lined baking sheet or tray. Refrigerate until firm enough to stack in a lidded container or in a bag.
